For the salad: (this makes about 4 jars worth)
- 1 cup uncooked wheatberries (makes 2 & 1/4 cup cooked)
- 1 cup uncooked quinoa (makes 2.5 cups cooked)
- 1 cup edamame
- 2 whole diced carrots
- 1 large diced red pepper
- 1 large diced green pepper
- 1/2 cup finely chopped fresh parsley
- 2/3 cup freshly squeezed orange juice
- 1/3 cup 100% pure apple juice
- 1 tbsp apple cider vinegar
- 1 tbsp fresh minced ginger
- 1 tbsp fresh lime juice
- sea salt to taste
