A very SWEET Potato Veggie Burger

Ingredients

1 large sweet potato, baked/peeled/mashed
1 cans cannellini white beans, drained Mash beans and potato together
1 tsp Maple syrup
1 tsp Cajun seasoning with a few splashes of garlic powder
1/8 cup Wheat flour (more if needed)
1 tbsp Egg whites
Thinly sliced avocado as topping
and don't forget the Dijon mustard, grain buns, romaine, pepper
safflower oil for pan

Directions:

1. Mash beans and potato together.
2. Mix in egg, maple syrup,seasoning, flour and any additional seasoning.
3. Form a patty. Add a little more flour or panko on the outside of the patty.
4. Heat a little safflower oil in a pan over high heat.Brown outside.
5. Bake Patty at 375 for 20 - 25 minutes.
6. Transfer cooked patties to paper towel. Cool for a few minutes.
7. Serve on multi-grain bun with toppings.
