Cannelini Beans GARLIC and Kale Soup

This brothy soup provides heart-healthful nutrition on many levels: kale and garlic are good for the cardiovascular system;  shiitake mushrooms contain eritadenine, an amino acid that speeds up processing of cholesterol in the liver. Truly a favorite soup that warms the heart and soul.
  • 1 1/2 cups cannelini beans soaked overnight
  • 3 cups water
  •  ¼ cup brown rice vinegar
  • 2 bay leaves
  • 1 tsp. sea salt
  • 2 tbsp. olive oil
  • 1 onion, peeled and diced
  • 10 garlic cloves, peeled and minced
  •  3.5 oz. shiitake mushrooms, stemmed and thinly sliced (1 cup)
  • 1 bunch kale, coarsely chopped
  • 4 cups water, vegetable or chicken stock
  • 1/4 tsp. dried rosemary
  • 1 tsp. dried thyme
  • Sea salt and black pepper (to taste)
Discard soaking water from beans and cook with 3 cups fresh water.  Bring to a boil and skim off any foam that rises. Add bay leaves, cover and lower heat to simmer for 1 hour and 15 minutes.  Add 1 tsp. sea salt and continue cooking 30 minutes. In a separate pot, Heat oil in 2-qt. saucepan over medium heat. Add mushrooms, and season with salt, if desired. Sauté mushrooms 10 minutes, or until beginning to brown. Add garlic & onion, and sauté 3 minutes more. Stir in vinegar; simmer until vinegar is almost evaporated, stirring to scrape up browned bits from pan. Add kale and cook until wilted. Add 4 cups stock, rosemary, and thyme.  Add the cooked beans (**puree 1/2 the cooked beans in a food processor before adding to the soup pot if you would like to achieve a creamy soup consistency). Bring all ingredients to a boil, then lower heat to medium and cook 10-12 minutes.  Season with sea salt and black pepper to taste.  YUMMMMM!

8. When consumed by pregnant women it can help decrease the risks of pre-eclampsia.
In addition, it can help increase the birth weight of babies at risk of being born too small.

9. Garlic helps to improve memory and brain function.

10. Garlic has excellent antiseptic properties. Putting garlic on wounds and pimples will help them to heal faster and prevent infection.

11. Garlic has amazing anti-bacterial, anti-viral and anti-fungal properties. It helps to fights infections by stimulating T-cells. It can be used to fight internal parasites, yeast and Candida Albicans infections.

12. Garlic purifies the blood.

13. When in need of a laxative, try eating some garlic. Eating garlic regularly can help keep you regular.

14. Garlic helps to control flatulence and helps with digestion and stomach upsets.

15. Many insects do not enjoy the taste of garlic. Eating garlic during the summer months can help decrease the amount of insect bites one receives.
