Green & Bean Tacos

INGREDIENTS:
Corn Tortillas
Crumbled feta cheese

chard kale & leek saute
Handful large green chard leaves, chopped
2 large Handfuls kale, chopped
drizzle of olive oil
3 cloves garlic
1 leek, sliced thin

black beans
1.5 cups black beans
1 tablespoon olive oil
1 clove garlic
1/4-1/2 cup water
1/2 teaspoon cumin
1/2 teaspoon corriander
1/2 teaspoon paprika
pinches of salt, to taste

zucchini avocado salsa
1 zucchini
1/2 cup cilantro
1/4 cup chopped red onion
zest and juice from 1 lime
 pinch of cayenne
 1/2 teaspoon honey
1 small avocado, diced
salt & pepper, to taste

Beans:  heat beans in a medium sauce pan, add all other ingredients, simmer for a few minutes on low. Taste and adjust seasonings to your liking. Remove from heat, set aside, cover to keep warm

Kale chard & leeks: in a small skillet, saute with olive oil, garlic and a pinch of salt until just wilted (1-2 mins). Set aside.

Salsa: Mix all ingredients (except avocado) in a food processor. Taste and adjust seasonings to your liking – salt, lime, sweetness… chop avocado and mix in. Taste and adjust again.

Assemble tacos

LOVEely Ravioli


Dough
  • 2 cups Organic Unbleached All-Purpose Flour
  • 3 egg yolks
  • around  ½ cup of beet juice ( from juiced beets)
** Juice enough beets to boil ravioli in later **

Filling
  • 1 tablespoon butter
  • 4  - small diced  - garlic cloves
  • 1 bunch fresh spinach
  • ½ cup Ricotta
  • 4 ounces lump crab meat

To make the dough:
Add flour to a large bowl and make a well in the center. Add the yolks and the beet juice, then stir to combine. When you can no longer mix with a fork, turn the dough out on a floured surface and knead until smooth.

To make the filling:
In a small pan, melt a touch butter and sauté the garlic for a few minutes until soft and tender. Transfer the garlic butter to the food processor. Add the fresh spinach and blend until the spinach and shallot are very finely pulsed. Transfer to a bowl, and fold in the ricotta until well combined. Then fold in the lump crab meat gently. Season to taste with salt and pepper.

Assembly:
Roll the dough out into a large, even rectangle approximately 1/16 of an inch thick. Cut the rectangle in half.
Grab about a tablespoon of filling (or whatever will work best for the heart shaped size of cookie cutter you’re using) and mold it into a heart shape. Arrange filling hearts about an inch apart from each other until you’ve covered half of the dough.

 Dot a little bit of water around the edges of the filling, then place the other half of the dough rectangle on top and press to seal. Using your heart shaped cookie cutter, cut out each ravioli.  Cover with a damp tea towel or plastic wrap and set aside.

Gently remove each ravioli from the counter. Press around the edges with a fork to seal. Bring a large pot of BEET JUICE & water  to a boil. Add ravioli and boil until they just begin to float.

Chocolate Covered Kale Chips

 Ingredients:

1 very very big bunch curly kale, stems removed, washed, and thoroughly dried
3/4 cup cashews (you can soak these for an hour beforehand, but it’s not necessary)
1/4 cup raw cacao powder (substitute regular cocoa powder)
1/2 tsp vanilla extract
1/4 cup hemp seed
1/4 cup nutritional yeast
1/4 cup maple syrup
5 tbsp water
1/2 tsp sea salt
1/2 tsp cinnamon

Directions:

1) Tear kale into pieces and place in a large mixing bowl.
2) Blend cashews, cacao, vanilla, hemp seed, nutritional yeast, maple syrup,and water in a blender till smooth. Resembles chocolate sauce
3) Pour sauce over kale, and mix with hands until kale is well coated.
4) Sprinkle sea salt and cinnamon
4) Transfer  to baking sheet.  Bake chips at 300 degrees Farenheit for about 15 minutes. Flip chips, and bake for another 15. flip again for another 15. If they’re still “wet,” allow them to crisp up further, but if they start burning before your 15 minutes are done, take them out. Kitchen intuition!

Klean Ketchup

Making your own ketchup is so EASY to make at home and making it yourself allows you to control what goes into it.

Organic Ingredients:
  • 6 oz can tomato paste
  • 1/4 cup honey or agave
  • 1/2 cup cider vinegar
  • 1/4 cup water
  • 3/4 tsp sea salt
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 tsp cinnamon
  • 1/8 tsp cayenne pepper

Directions:

Combine all the ingredients in a medium saucepan over medium heat; whisk until smooth. When it comes to a boil, reduce heat to low and simmer for 20 minutes, stirring often. Remove from heat and cover until cool. Chill and store refrigerated in a covered container.

Multigrain Cinnamon Banana Waffles

B

Ingredients 

3 large eggs
1 cup Chobani Yogurt 
1 cup almond milk 
2 cups Bob's Redmill 10 Grain Pancake
2 tablespoons wheat germ
2 tablespoons ground flaxseed
Banana, fresh, 2 medium-  smashed

1 cup walnuts - pureed
Cinnamon to taste

Directions

Mash bananas, puree walnuts and incorporate into the rest of the ingredients. Preheat a waffle iron. Coat iron with a touch of cooking spray n needed. Spoon batter onto hot waffle iron, spreading batter almost to the edge. Cook about 4 -5 minutes until steaming stops; repeat procedure with remaining batter.

Drizzle with a touch of honey and maple syrup. Add favorite toppings.  Yummy!

Personal Portobello Pizza

Portobello Pizza is a delicious recipe and perfect for vegetarians and anyone who wants healthy, great-tasting, different foods. It substitutes a large portobello mushroom for a doughy carb loaded pizza crust. Even better? It can be made in just minutes!

Ingredients

  • 1 large portobello mushroom tops, stems removed and gills scraped per person
  • Extra-virgin olive oil, for drizzling
  • Salt and freshly ground black pepper
  • Olives
  • Grape tomatoes quartered
  • Clove of garlic, chopped
  • Sauteed spinach
  • Sauce of choice:  marinara sauce, pesto , alfredo
  • Basil leaves, shredded or torn
  • Shredded Parmigiano
  • Shredded Mozzarella 
  • Any toppings of your choice

Directions

Preheat broiler.
Dress the mushroom caps with extra-virgin olive oil and season with salt and pepper. Broil the portobello mushrooms 5 minutes on each side until tender.
Add sauce of choice, then fill your mushroom caps with fillings of choice and top with cheese, place under broiler to brown 2 to 3 minutes then serve.

Cannelini Beans GARLIC and Kale Soup

This brothy soup provides heart-healthful nutrition on many levels: kale and garlic are good for the cardiovascular system;  shiitake mushrooms contain eritadenine, an amino acid that speeds up processing of cholesterol in the liver. Truly a favorite soup that warms the heart and soul.
  • 1 1/2 cups cannelini beans soaked overnight
  • 3 cups water
  •  ¼ cup brown rice vinegar
  • 2 bay leaves
  • 1 tsp. sea salt
  • 2 tbsp. olive oil
  • 1 onion, peeled and diced
  • 10 garlic cloves, peeled and minced
  •  3.5 oz. shiitake mushrooms, stemmed and thinly sliced (1 cup)
  • 1 bunch kale, coarsely chopped
  • 4 cups water, vegetable or chicken stock
  • 1/4 tsp. dried rosemary
  • 1 tsp. dried thyme
  • Sea salt and black pepper (to taste)
Discard soaking water from beans and cook with 3 cups fresh water.  Bring to a boil and skim off any foam that rises. Add bay leaves, cover and lower heat to simmer for 1 hour and 15 minutes.  Add 1 tsp. sea salt and continue cooking 30 minutes. In a separate pot, Heat oil in 2-qt. saucepan over medium heat. Add mushrooms, and season with salt, if desired. Sauté mushrooms 10 minutes, or until beginning to brown. Add garlic & onion, and sauté 3 minutes more. Stir in vinegar; simmer until vinegar is almost evaporated, stirring to scrape up browned bits from pan. Add kale and cook until wilted. Add 4 cups stock, rosemary, and thyme.  Add the cooked beans (**puree 1/2 the cooked beans in a food processor before adding to the soup pot if you would like to achieve a creamy soup consistency). Bring all ingredients to a boil, then lower heat to medium and cook 10-12 minutes.  Season with sea salt and black pepper to taste.  YUMMMMM!

7. Garlic helps to break down and prevent gallstones, bladder stones and kidney stones

8. When consumed by pregnant women it can help decrease the risks of pre-eclampsia.
In addition, it can help increase the birth weight of babies at risk of being born too small.

9. Garlic helps to improve memory and brain function.

10. Garlic has excellent antiseptic properties. Putting garlic on wounds and pimples will help them to heal faster and prevent infection.

11. Garlic has amazing anti-bacterial, anti-viral and anti-fungal properties. It helps to fights infections by stimulating T-cells. It can be used to fight internal parasites, yeast and Candida Albicans infections.

12. Garlic purifies the blood.

13. When in need of a laxative, try eating some garlic. Eating garlic regularly can help keep you regular.

14. Garlic helps to control flatulence and helps with digestion and stomach upsets.
