Roasted Cauliflower and Butternut Squash Soup
Ingredients:
1 medium/large Butternut Squash, peeled, cubed
1 head of Cauliflower, washed, chopped
1 bulb of garlic - whole
3 medium carrots, peeled, chopped
1 medium Onion, diced
5-6 cups Vegetable Broth, chicken broth, or Water
1 tsp All-Spice
1/2 tsp Nutmeg
1 tsp Ground Thyme
1/2 tsp Cumin
1 tsp Ground Cloves
1/2 tbsp Sea Salt
Salt and Pepper to Taste
2 tbsp Olive Oil
1/2 cup Almond Milk
Directions:
1) Preheat the oven to 400 degrees F.
2) In a large bowl, toss the butternut squash, cauliflower, carrots with a tablespoon of olive oil and a little sea salt. Spread the vegetables on a large cookie sheet and roast for about 15-25 minutes till fork tender.
3) Add the other tablespoon of olive oil to a heavy soup pot and add the onions. Saute until the onions are translucent.
4) Add the roasted veggies to the pot and cover with the broth or water. Bring to a boil. Cover and turn down the heat. Simmer for approximately 20 minutes.
5) Remove the soup from the heat and cool briefly. Now with an immersion blender (or you can transfer to a regular blender) blend the soup until all of the large chunks are gone. You can continue to blend to your soup until it’s at a consistency you like.
6) Place the pot back on the heat and add the spices. Adjust the flavors to your taste. Simmer for 5 minutes.
7) Stir in the almond milk and warm through.
8) Garnish with tablespoon of Greek yogurt and a few roasted pumpkin seeds.
